Last month Steve and I had a lovely couple of days in Edinburgh. As usual, I was asking for recommendations for places to eat and my good friend Emily suggested Six by Nico in which she’d been to with her brother who lives in Edinburgh. Every six weeks the restaurant serves up a six-course taster menu with a theme based upon a place or memory. When Emily and her brother visited the theme was “Willy Wonka and the Chocolate Factory” and past themes include “Route 66”, “Childhood” and “The Chippie”. When I landed on their website and saw that the theme for whilst we were there was “Mexico” I booked a table straight away!

The restaurant based on Hanover Street is deceptively large but feels cosy and you are definitely well looked after. The staff are keen to share their favourite dishes with you and get excited talking about the other themes they have ran. Every dish we had was delicious my favourite being the chicken thigh taco which was served with guacamole, whipped creme fraiche and strawberry salsa. I know mixing sweet and savoury isn’t everyone’s cup of tea, but I personally am a big fan of it. The sweetness of the strawberries complemented the chicken perfectly.

This is my own version of the dish we had. I have no idea what sauce the chicken was in, it almost felt creamy and that’s why I have added creme fraiche to my sauce, and the chipotle paste gives it a lovely smokey taste.

Serves 2

4 chicken thigh fillets cut into small chunks
glug of vegetable oil
1/2 red onion finely chopped
2 cloves of garlic crushed
2 tsp creme fraiche

For the chicken sauce:

2 medium ripe tomatoes
1 tsp dried oregano
2 tsp chipotle paste
salt and pepper

For the strawberry salsa:

8 medium strawberries cut into small chunks
1/4 red onion finely chopped
1/2 lime, juiced
a handful of fresh coriander roughly chopped

For the guacamole:

1 ripe avocado cut into chunks
1/2 red onion finely chopped
1 jalapeno chili chopped
1/2 lime, juiced
a handful of fresh coriander roughly chopped
salt and pepper

To serve:

Soft corn tortillas folded into tacos

  1. To make the sauce for the chicken put all the sauce ingredients into a blend and blitz into a smooth sauce.
  2. To make the strawberry salsa, place all ingredients in a small bowl and combine.
  3. To make the guacamole, place the avocado in a small bowl and mash with a fork. Then add all other ingredients and combine.
  4. Heat the oil in a pan over a medium heat, when the oil is hot add the chicken thighs, onion and garlic. Cook, until the chicken is cooked through this will take about 10-15 minutes.
  5. When the chicken is cooked, add the sauce to the pan and cook on high for 5 minutes so that some of the liquid evaporates. Just before serving stir in the creme fraiche – it shouldn’t be too creamy.
  6. Serve with warm tortillas.
