I have read a very interesting book this year called ‘The Clever Guts Diet’ by Micheal Mosley and it reminded me that I don’t eat nearly enough fish in my diet. I really enjoy fish but I think I just don’t feel very inspired to make anything exciting with it and I always fear I will overcook it and spoil it. So in my quest to change this, I have turned to Jamie Oliver, who else! His Happy Days book (and in my opinion his best book) has an excellent section on some speedy fish recipes which I remember mum cooking for us mid-week when we lived at home. They are oh so easy and very difficult to get wrong/overcook and more importantly they are packed with flavour. I hope that they give you some inspiration too, we have certainly incorporated them back into our regular evening meals repertoire. We usually serve the fish with potatoes, sweet potato wedges, a salad or both.

Baked Cod with Avocado, Prawns, Creme Fraiche and Cheese

Serves 2

Ingredients

Extra virgin olive oil
Sea salt and freshly ground black pepper
2 x 225g cod/haddock fillets, skinned and pin-boned
1 small handful of fresh basil, ripped
1 avocado, peeled, pitted, halved and sliced
150g peeled prawns, uncooked
140ml creme fraiche
150g cheddar cheese

Method

  1. Preheat the oven to 220C. Rub a baking dish or roasting pan with a little olive oil, season the cod on both sides with salt and pepper and place in the dish.
  2. Add on top of the fillets the basil, avocado and prawns. Blob over the creme fraiche and grate over the cheese.
  3. Cook in the preheated oven for 15-20 minutes until golden brown and bubbling.

Roasted Cod with Cherry Tomatoes, Basil and Mozzarella 

Serves 2

Ingredients

2 x 225g cod/haddock fillets, skinned and pin-boned
Olive oil
Sea salt and freshly ground black pepper
2 handfuls of red and yellow cherry tomatoes, halved
1 handful of fresh basil, leaved picked from stems
1 ball of buffalo mozzarella, finely sliced
1 handful of grated Parmesan cheese

Method

  1. Pre-heat the oven to 220C. Place the cod fillets in an oiled roasting pan. Drizzle with olive oil and season.
  2. Place the tomatoes, basil and mozzarella slices on top of the fillets. Sprinkle over the Parmesan, drizzle over some olive oil, and bake at the top of the preheated oven for about 15 to 20 minutes, until golden.
