These are one of my favourite things to have for lunch at the weekend. They’re super easy to make and are great to make as a snack if you have friends over. Try and make your own hummus if you have time, it’s delicious and tastes so much better than the shop bought kind.
Ingredients
Serves 2
4 small corn tortillas
1 large avocado sliced
juice of 1 lime
For the hummus:
400g can of chickpeas
2 cloves of garlic crushed
2 tbsp lemon juice
1tsp ground cumin
1 tsp paprika
1 tbsp tahini
3 tbsp olive oil
8 slices of pickled jalapeños
pinch of salt
To make the hummus:
Blitz all hummus ingredients in a food processor.
To make the quesadillas:
1. Heat a non-stick frying pan over a medium heat. Place a corn tortilla into the heated pan and heat on both sides for about a minute each until the edge of the tortilla turns slightly brown, but be careful not to burn. Repeat this process with all your tortillas.
2. Spread a generous helping of hummus onto one tortilla then lay pieces of the avocado across one half and drizzle with the lime juice. Fold the tortilla in half and then using a knife cut in half again. Repeat this process for all of your tortillas.
